Ingredients:

2 1/2 cups sprouted garbanzo beans (chickpeas) OR
canned garbanzos, drained and rinsed

4 large eggs

1/2 teaspoon fine-grain sea salt

1/3 cup chopped fresh cilantro

1 onion, chopped

Grated zest of one large lemon

1 cup micro sprouts, chopped (try broccoli, onion, or alfalfa sprouts – optional)

1 cup toasted (whole-grain) bread crumbs

1 tablespoon extra-virgin olive oil (or clarified butter)

Instructions:

Steam sprouted garbanzos until tender for about ten minutes (ff you are using one). – For those using canned beans, combine these with eggs and salt in a food processor.

Puree the mixture until you get a very thick, slightly hummus product.

Pour the mixture into a mixing bowl and add in the cilantro, onion, zest, and sprouts. Stir in the breadcrumbs and let it sit for a few minutes to allow the crumbs to absorb the mixture.

Moist the mixture with a little water to form them easily into one and a half inch patties.

Heat oil in a skillet over medium fire. Add four patties, cover, and cook until the bottoms begin to brown.

Turn the patties to the other side and cook until golden brown. Remove the patties from skillet and drain the excess oil.

Cut each patty in half. Insert your favorite vegetarian filling and serve

immediately. This makes 12 mini burgers.

Ingredients:

For the burgers:

1kg or 2¼lb minced lamb (it’s best not to use extra-lean mince as the fat will help bind the burgers and keeps them juicy when cooked)

2 garlic cloves, crushed

1 medium onion, finely chopped

1-2 tbsp mango chutney

3cm/1¼in piece of fresh ginger, peeled and grated

1 red chili, de-seeded and finely chopped

¼ tsp ground turmeric

1 tsp coriander seeds, crushed

1 tsp cumin seeds, crushed

flaked sea salt and freshly ground black pepper

oil, for brushing

flat bread, pita bread or burger buns, to serve

For the relish:

6 ripe tomatoes, quartered, de-seeded and diced

200g/7oz tub of Greek yogurt

bunch of fresh coriander, roughly chopped

1 small red onion, finely chopped

squeeze of lemon or lime juice

Instructions:

Place the lamb in a mixing bowl. Add the garlic, onion, mango chutney, ginger, chili, turmeric, coriander, and cumin. Season with salt and pepper and mix using the hands until well combined.

Divide the mixture into 8 to 10 burgers and shape them into burger patties. Put them in the refrigerator at least 30 minutes before cooking.

Brush a little oil on a grill to prevent the burgers from sticking. Barbecue the sides of the patties over medium heat for about five minutes on each side.

In another bowl, mix together tomatoes, yogurt, coriander, onion, lemon juice, salt and pepper. Serve this mixture with the burgers as a dipping sauce or spread it inside bread buns and put the burger in. You can add seeded cucumbers and sliced tomatoes inside the buns if you like.

Ingredients:

Salt

Pepper

Paprika

garlic (chopped)

spring onions (chopped)

onion (chopped) instead of spring onion. The flavor you can change to whatever flavor you like. Can add some brown sugar if you want it slightly sweet and if grilled it gives that nice caramelized looks.

BBQ sauce (thick ones, not the watery type) or liquid smoke also

binder used: 1 egg for 1lb meat and about 2 tablespoon breadcrumbs

Instructions:

In a large mixing bowl, combine all ingredients. Mix well using your hands but never overdo it. You can also use a dough mixer, but also do not overwork.

Divide the mixture into four. Flatten each part to make a burger patty, and create a small hole in the middle about half an inch in diameter.

Grill the patty in a slightly greased pan or griller. You would know that the patty is already done when the hole in the middle is fully closed.

Just before lifting it off the griller put a slice of cheddar cheese on each burger patty. Allow the cheese to melt a little.

Serve the burgers with salad, tomato, or onion stuffed in a bun.

Ingredients:

2¼ pounds salmon fillet, skinned and de-boned

½ cup scallions, minced

Six sesame rolls or hamburger buns

½ cup Japanese bread crumbs

¼ cup fresh cilantro leaves, chopped

Two teaspoons ginger, minced

One teaspoon sambal oelek chili paste

One teaspoon garlic, minced

¾ cup mayonnaise

Three cups purple cabbage, shaved

Three cups green cabbage, shaved

½ cup red onion, shaved

One egg, lightly beaten

One teaspoon salt

½ teaspoon red pepper, crushed

Kosher salt

¼ cup sugar

¼ cup plus 2 tablespoons vegetable oil

¼ cup plus 1½ teaspoons soy sauce

Three tablespoon rice wine vinegar

Two teaspoons toasted sesame oil

One tablespoon toasted sesame seeds

Instructions:

Cut the salmon fillet into about 1-inch pieces and put it inside a food processor. Pulse the pieces till they are finely chopped. In a mixing bowl, add the chopped salmon, Japanese bread crumbs, ¼ cup of minced scallions, 2 tablespoons of cilantro, minced ginger, beaten egg, chili paste, garlic, ½ teaspoon of salt, and 1½ teaspoon of soy sauce. Mix all these ingredients together. Make sure they blend in well. Now divide this mixture into 6 portions. Form patties about 4-inch wide and ¾-inch thick out of this mixture. Lay them down on a parchment-lined baking sheet. Cover them with a plastic wrap.

Meanwhile, add the remaining soy sauce in a saucepan, along with sugar and cook the mixture for about 2-3 minutes. The content of the saucepan should turn into syrup. Remove it from the heat, and allow it to cool down. Once the syrup has cooled down, add about 1½ tablespoon of this soy glaze to the mayonnaise. Refrigerate the mayonnaise.

Now, mix the purple cabbage, green cabbage, the remaining scallions, red onions, ¼ cup of vegetable oil, rice wine vinegar, 2 tablespoon of cilantro, sesame oil, ½ teaspoon of salt, and crushed red pepper together. Toss the mixture well, so that all the ingredients get mixed properly. Sprinkle some toasted sesame seeds on this mixture and refrigerate it.

Put a skillet over medium heat, and add 2 tablespoons of oil in it. Season both sides of the salmon burgers with kosher salt and place them on the skillet. Cook them till both the sides turn golden brown in color. You can garnish the salmon burgers with soy mayonnaise and sesame slaw.
