Ingredients:

¾ cup boiling water

½ cup cocoa

1 teaspoon instant coffee

1 ¾ cups flour

1 ¾ cup granulated sugar

1 ½ teaspoon baking soda

8 egg yolks

2 teaspoons vanilla extract

½ teaspoon cream of tartar

½ cup vegetable oil

Instructions:

Preheat oven to 325 degrees. Grease and flour four tube pans.

Sift cocoa, instant coffee, sugar and flour together.

Add oil, vanilla and egg yolks. Beat at medium speed until blended well.

Use an electric mixer and beat the egg whites and cream of tartar at high speed.

Fold the egg whites into the batter.

Since we are to make four layers, you can use four tube pans, or use only one and slice the whole cake into four. Bake the pans two at a time for 17 to 20 minutes. If you are using only one pan, let it bake for an hour or so.

Spread coffee cream butter filling between the layers.

Once assembled, frost the whole cake with chocolate fudge frosting.

You can try other kinds of fillings and frost that would complement the mocha cake.

Chill and serve.

Lemon chiffon cakes are made up of lemon sponge cakes and frosting on top. This particular recipe is a special cake made up of layers of lemon sponge and lemon curd. While lemon chiffon cakes use merely lemon zest, this recipe incorporates lemon curd and lemon juice. This will take a little longer in preparation, about 45 minutes.

Ingredients:

1 teaspoon cream of tartar

8 egg whites

¼ teaspoon salt

1 cup sugar

7 egg yolks

1 cup flour

1/3 cup lemon juice

2 cups whipping cream

2 cups lemon curd

Instructions:

Preheat oven to 325 degrees.

In a bowl, mix cream of tartar, salt and egg whites. Beat using electric mixer until it becomes foamy and frothy.

Gradually add half a cup of sugar until the soft peaks become stiff and glossy.

In a separate container, beat the egg yolks. Beat until the color becomes light and lemon-like. This will probably take around 3 minutes.

Like the first mixture, slowly add remaining sugar. Add flour and lemon juice.

Pour in the egg whites and fold into yellow mixture.

Put everything into a 10 inch pan and bake for 40 to 50 minutes.

Invert the cake and let it cool.

Beat the whipping cream until it thickens slightly. Add ½ cup of the lemon curd and beat the together for a minute. Refrigerate to let it cool.

Slice the cake to make 3 layers. Spread half of the remaining lemon curd on the first layer. Top with the second and spread remaining lemon curd on it.

Ingredients:

6 large egg whites

¼ cup sugar

½ teaspoon cream of tartar

1 box of white cake mix

1 tablespoon oil

1 can lite unsweetened coconut milk

1 teaspoon coconut extract

18 drops of yellow food coloring

For the Coconut frosting

¾ cup marshmallow crème

¾ cream cheese frosting

1 ½ cups sweetened flaked coconut

Instructions:

Preheat the oven to 325 degrees and ready a 10-inch baking tube pan with a removable bottom.

You will first make the cake. Beat egg whites and cream of tartar in a mixing bowl using an electric mixer at medium speed. Continue with the beating until it become frothy and soft peaks form.

Slowly add in the sugar while beating more slowly. Continue this until the mixture becomes glossy and stiff.

In another container, combine the white cake mix, oil, coconut milk, coconut extract and yellow food coloring. The yellow food coloring is added to capture the rich color of coconut shells.

Fold in the egg white and sugar mixture into the baking mix an combine until everything is blended in.

Pour the mixture into the ungreased pan, waiting for it to settle.

Bake for 1 hour until ready (use cake testers to see if the middle is well-done).

Mix the marshmallow creme and cream cheese frosting and spread evenly on the top of the cake.

Sprinkle the flaked coconut on top.

Chill and serve.
