<li>1 medium sized zucchini</li>
<li>1 eggplant</li>
<li>3 tablespoons of olive oil</li>

<li>3 cups of thinly sliced fresh Mozzarella cheese</li>

<h1>Instructions:</h1>
<ol>
<li>Cut the vegetables into long strips.</li>
<li>Brush the cut vegetables with olive oil and season according to taste. Then, grill them for at least 5 minutes on each side or until you see that they are cooked and ready.</li>
<li>Prepare the bread by brushing the insides with olive oil. Toast the inside of the bread on the pan until it acquires a light brown color.</li>
<li>Assemble the Panini by making layers out of the grilled vegetables, cheese and basil.</li>
<li>If you wish, you may want to drizzle the fillings with a simple vinaigrette to enhance the flavor.</li>

<li>Take a piece of loaf bread and cut this in half lengthwise. Spread mayonnaise on cut area.</li>

<p>The Cuban sandwich recipe for today is more to the “meaty” side as roast pork is used for the filling.</p>

<li>1 lb of cooked and sliced ham</li>
<li>1 lb of roasted and sliced pork</li>

<li>Before assembling the sandwich, preheat the frying pan over medium heat.</li>

<li>Once the sandwich is assembled, coat the frying pan with oil or non – stick spray.</li>
<li>Put the sandwich on top of the hot pan and flatten it with the use of a clean heavy skillet. To achieve the ideal color, you may want to leave the skillet on top of the sandwich for at least one to 2 minutes. Be careful not to burn the bread.</li>
<li>Turn the sandwich over and repeat step number 4.</li>
<li>Serve while hot.</li>

<li>In a heated non-stick pan, carefully transfer each of the sandwiches using a spatula. Cook until golden on the side, about four minutes. Turn it over and cook the other side until golden and the cheese has melted. Turn over for the last time and cook for two more minutes.</li>

<li>2 scallions (spring onions) very finely sliced</li>
<li>2oz (50g) Parmig1ano Reggiano shavings</li>
<li>salt and freshly milled black pepper</li>

<li>In a large mixing bowl, combine butter, mustard, and sliced scallions. Season them with salt and freshly milled black peppers according to taste. Mix well</li>

<li>1Pkg. 8 count Supersized Crescent rolls (croissants).</li>
<li>2 cans Albacore white tuna. (Regular tuna in water is alright).</li>
<li>1/2 stalk celery diced.</li>
<li>1 Tbsp. Minced onion.</li>
<li>1/4 cup Mayonaise or more.</li>
<li>Pinch of salt &amp; pepper.</li>
<li>Lettuce, your choice.</li>
<li>1/2 cup Wavy potato chips, crushed by hand.</li>

<h1>Instructions:</h1>
<ol>
<li>Preheat the oven. Bake the croissant rolls, carefully following the package directions. Remove from the oven and let it cool.</li>
<li>Slice the bread into halves. Spread some butter on one side if you like.</li>
<li>Open the cans of tuna and drain well.</li>
<li>For the mean time, dice the celery and mince the onions.</li>
<li>Mix everything together in a large bowl, excluding the lettuce. Season with salt and pepper according to taste.</li>
<li>Add the crushed potato chips into the mixture and toss lightly.</li>
<li>Take one slice of bread and spread the salad on top.</li>
<li>Carefully arrange the sandwiches on a plate. Put some potato chips on the side and then serve.</li>
