After creaming butter in a large bowl, add sugar, brown sugar, eggs, buttermilk, baking powder, baking soda, flour, and cinnamon and mix well. Cheese Pound Cake:
Another delicious cake is cream cheese pound cake.

Ingredients include 1/2 lb. butter, 1/2 pound cream cheese, 2 cups sugar, 2 cups self-rising flour, 6 eggs and 2 teaspoons vanilla. Above all, cream butter, cream cheese and sugar until they become smooth. Then, add flour, eggs and vanilla. Blend completely with cream cheese mixture and pour it into greased 10" tube pan. Bake at 350 degrees approximately for 45 minutes to 1 hour. Be careful not to over bake causing the cake to become too dry.

However, even though you follow the instruction carefully, it does not necessarily mean you can make a perfect cake for sure. As for the real procedure of cooking a cake, we have to admit that it is usually not so easy for a beginner who probably get so many experiences when the homemade cake just did not come out right. The newly cooked cake may fell apart, or it is too dry.

In order to make it easy, here are some cooking tips for you to follow. Above all, it is essential to grease and flour pans as directed in recipes for butter-type cakes. However, you do not need grease pans for angel, sponge and chiffon cakes unless directed in the recipe. Then, it is better to brush the bottom and the sides of your cake pans with a pastry brush. If you put your cakes in a cold oven, the varying temperature of the oven will cause the cake to be drier and even will cause the cake to be misshapen. In the course of cooking, you should place the oven in the center of the oven, unless the recipe states differently. Bake only on one rack. Remember that if you use glass pan, reduce the temperature by 25 degrees.

After the cake is done, remember to cool the cakes completely on wire racks for at least three minutes before taking the cake out of the pan. Try to level the top of the cake using a butter knife to give it a really good look. Make sure to brush away any crumbs from the top of the cake to avoid having a lumpy frosting. If you can not eat all this cake, you should store the cakes with creamy frostings under a cake saver or large inverted bowl.
