How to Make a Brocolli & Four Cheese Calzone

Calzone brings the traditional pizza to a whole new level. Instead of using a flat and round dough, pizza is given more depth by folding the dough in half and stuffing the toppings inside the dough.

Today’s calzone recipe blends in the flavor of homemade dough, broccoli and four cheeses.

Ingredients:

  • 1 1/3 cups warm water ( approximately 110 degrees F/45 degrees C)
  • 2 tablespoons olive oil
  • 2/3 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 4 cups bread flour
  • 2 1/2 teaspoons active dry yeast
  • 1 (10 ounce) package chopped frozen broccoli, thawed
  • 1/4 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1/2 cup provolone cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup ricotta cheese
  • 1 tablespoon olive oil

Instructions:

  1. Preheat the oven into 500 degrees Fahrenheit.
  2. Prepare the bread dough by combining the water, oil, bread flour, oregano and yeast in a deep bowl. Mix, knead and allow it to rest the way you would if you are making regular bread.
  3. While the dough is rising, make the filling by sautéing the broccoli with garlic powder and olive oil over low fire. Once ready, turn off the heat and stir in the cheeses.
  4. Flatten the dough and roll it into circles with approximately 8 to 10 inches in diameter.
  5. Spread the prepared mixture on the half part of the dough and close it by bringing the unfilled part over to the other side and pinching the edges together.
  6. Before baking, brush the dough with olive oil.
  7. Cook in the oven for at least 20 to 30 minutes or until the dough achieves a golden brown color.
  8. Serve while hot.
