Spinach dip is equally yummy and healthy, too! The Spinach dip is perfect for chips, tortilla chips, ranch chips, crackers, pita crackers, bread and even vegetables. Vegans will love this dip.
Ingredients:
- 1 cup Monterey Jack cheese (shredded)
- 1/2 cup Parmesan cheese (shredded)
- 1 package frozen spinach (chopped)
- 1 cup mayonnaise
- 1 cup sour cream
- 1 cup jalapeno (finely chopped)
- 1 can water chestnuts (drained and chopped)
- 1 onion (finely chopped)
- Pumpernickel bread (optional)
Instructions:
- First of all, defrost, drain and squeeze the frozen spinach using your microwave oven.
- Preheat oven to 350 degrees F.
- In a mixing bowl, combine the spinach, chestnuts, onions, mayonnaise and sour cream. Mix thoroughly and make sure everything is evenly distributed.
- Put into a baking dish. Sprinkle Parmesan cheese on top.
- Bake in oven for about 30 minutes or until the cheese has turned golden brown.
- You can serve this fresh from the oven or chill it for 5 to 6 hours.
- Serve with tortilla chips, or as a vegetable dip.
- This dip also goes well with pumpernickel bread. Cut the pumpernickel bread into 1/2 inch cubes and serve with dip.
