How to Make Banana Muffins

Banana muffins are great for breakfast and can be served with salads for lunch. The recipe below teaches you how to make an easy homemade banana muffin that you can also enjoy for snacks.

Ingredients:

  • 1/2 cup (or 1 stick) butter or margarine, softened
  • 1 cup sugar
  • 2 large eggs
  • 2 large ripe bananas, mashed
  • 2 cups flour (all-purpose)
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup buttermilk
  • 1/2 cup chopped walnuts
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. In a mixing bowl, beat butter and sugar at medium speed mixer or by hand until it becomes light and fluffy. Add eggs one at a time. Continue beating well. Add bananas and beat until right smoothness is achieved.
  3. In another bowl, mix together flour, salt, baking powder and baking soda.
  4. Stir in the flour mixture and buttermilk mixture alternately into the egg mixture until everything is mixed well and the mixture is just moistened. Never overdo the mixing because the batter will not look entirely smooth.
  5. Stir in the vanilla syrup and nuts.
  6. Put a little grease into 12 standard sized muffin tins or paper cupcake cups.
  7. Spoon batter into the muffin cups until 2/3 full. Bake for about 15-18 minutes until a little golden in color. Cool the pan slightly and then turn out the muffins.
  8. Serve it warm with butter.

Makes 12 medium sized muffins.
