There are dozens of ways to make this well-known soup, which was a staple in most part of the United States, hence its name. The bean soup recipe is not only for adults, but also for the kids. You won’t have trouble getting them to like soups for lunch or dinner with this tasty and delectable bean soup recipe.
Ingredients:
- ¾ cup of beans, soaked overnight and drained
- 1 cup peeled, seeded, and chopped tomatoes
- 6 cups beef broth
- 1 cup finely minced onion
- 2 yellow frying peppers, chopped up
- 2 tablespoons minced garlic
- 1 cup peeled and chopped parsnips
- 1 teaspoon dried thyme
Directions:
- In a large saucepan, drain the beans coming from an overnight soak. Add 6 cups beef broth and bring to a simmer. Reduce the heat and let it boil for 15-25 minutes.
- Whisk in peeled parsnips, minced onion and garlic, chopped pepper, and dried thyme. Cover and let it boil for 15-20 minutes until the beans are tender.
- Ladle 1 cup of soup in a food processor and blend it until the texture is smooth. Stir back into the pan, let it boil for another 2 minutes and your bean soup is ready to serve.
