How to Make Broccoli Soup

Broccoli soup recipe main ingredient is the steamed broccoli to preserve the cancer-fighting properties, phytochemicals.

Ingredients:

  • 1 large fresh broccoli, sliced
  • 2 tablespoons of flour
  • 6 cups of vegetable broth
  • 2 medium sized potatoes, cleaned and diced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 medium sized onion, diced
  • dried basil or curry powder

Instructions:

  1. Pour in the broth and potatoes in a soup pan, cover and bring to a boil. Minimize the heat and simmer for 10 to 15 minutes or until the potato is tender.
  2. Steam the broccoli around 5 minutes or until tender and set aside.
  3. In a cooking pan, heat 2 tablespoons olive oil and sauté onions until golden brown. Sprinkle flour onto the sautéed onion until cooked. Add a ladle of broth and pour over the saucepan flour mixture. Add salt and pepper to taste and whisk the mixture until thick and creamy.
  4. Remove the broth from the heat and add the flour mixture. Add in the broccoli and curry powder or dried basil to taste. Use a blender or food processor to process the food until creamy and serve hot.
