Broccoli soup recipe main ingredient is the steamed broccoli to preserve the cancer-fighting properties, phytochemicals.
Ingredients:
- 1 large fresh broccoli, sliced
- 2 tablespoons of flour
- 6 cups of vegetable broth
- 2 medium sized potatoes, cleaned and diced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 medium sized onion, diced
- dried basil or curry powder
Instructions:
- Pour in the broth and potatoes in a soup pan, cover and bring to a boil. Minimize the heat and simmer for 10 to 15 minutes or until the potato is tender.
- Steam the broccoli around 5 minutes or until tender and set aside.
- In a cooking pan, heat 2 tablespoons olive oil and sauté onions until golden brown. Sprinkle flour onto the sautéed onion until cooked. Add a ladle of broth and pour over the saucepan flour mixture. Add salt and pepper to taste and whisk the mixture until thick and creamy.
- Remove the broth from the heat and add the flour mixture. Add in the broccoli and curry powder or dried basil to taste. Use a blender or food processor to process the food until creamy and serve hot.
