Here’s a southern recipe that’s been a favorite of countless generations. Buttermilk pancakes are a staple in many family homes that appreciate the idea of a good breakfast. It’s always a welcome side dish to southern style bacon and eggs.
Ingredients:
- 1 1/2 cups sifted flour
- 2-1/4 teaspoons baking powder
- 3/4 teaspoon salt
- 2 tablespoons sugar
- 3/4 cup cornmeal
- 2 eggs well beaten
- 1 cup buttermilk
- 1/4 cup melted butter
Instructions:
- Sift together flour, salt, sugar and baking powder. When everything’s been sifted well together add the cornmeal, making sure that all your dry ingredients are mixed evenly
- In another bowl, beat together the melted butter with the eggs and milk
- Slowly add the egg mixture to the flour mixture to create a moist batter
- On a non-stick pan slowly ladle in some mixture and evenly spread out the batter to make a reasonably sized pancake
- Cook on both sides of the pancake until it turns a light golden color.
- To check if the pancakess are ready, gently rock your pan side to side and check if the pancake slides easily
- Stack pancakes on top of each other and serve while hot
