The Cantaloupe soup is a recipe that is best served chilled. This fruity soup makes use of both orange and lime juice to accentuate the flavor of the cantaloupe and to make the soup have an attractive orange color. This fruity soup is also rich in vitamins and very low in sodium compared to other creamy soups which makes use of salt and pepper to make it tasty. This cantaloupe soup recipe is very rich in protein and carbohydrates making it a both refreshing and nutritious at the same time.
Ingredients:
- 1/4 teaspoon cinnamon (ground)
- 1 tablespoon lime juice (preferably fresh)
- 2 cups orange juice
- 1 cantaloupe (peeled, seeded, and cubed)
Directions:
- In a blender or food processor, add in half a cup of orange juice and the diced cantaloupe.
- Blend or process until the mixture becomes consistently smooth and has a bright orange color.
- Transfer the mixture into a large bowl and add in the lime juice, the remaining orange juice, and a quarter of a teaspoon of ground cinnamon.
- Mix well and refrigerate the mixture for more than an hour. This Soup can be more refreshing if a sprig of mint is added when served.
