How to Make Chicken Mole

Chicken mole is a very popular recipe among Mexicans. Chilly powder is one of the important ingredients for this dish. It can simply be added to the chicken and dumplings and then cooked. There are other versions of making this dish, like tequila chicken with mole, mole Pablano, Mexican chicken mole, and chicken mole with rice, chicken mole enchiladas, chicken in mole sauce, quick chicken mole and lastly, chicken in green mole.

Ingredients:

  • Chicken breasts: 6
  • Olive oil: 4 tbsps.
  • Raisins: 1/4 cup
  • Garlic cloves: 2
  • Onion: 1
  • Green pepper: 1
  • Chilly powder: 2 tbsps.
  • Pimento pepper: 3 slices
  • Sugar: 1 tsp.
  • Tomato: 2, large
  • Grated orange: 1, rind of
  • Unsweetened chocolate squares: 2 ounces
  • Chicken broth: 2 ½ cups
  • Light Rum: ¼ cups
  • Silvered Almond: 4
  • Salt: 1/2 tsp
  • Pepper: 1/4 tsp.
  • Cinnamon: 1/4 tsp.
  • Cumin: 1/2
  • Nutmeg: 1/4 tsp.
  • Ground Cloves: 1/4 tsp.

Instructions:

  1. Mince the garlic cloves. Chop all the peppers and onion.
  2. Peel, seed and chop the tomatoes.
  3. Grate the orange rind and sliver the almond to make ¼ cup of it.
  4. Keep the chocolate squares chopped.
  5. Flavor the olive oil by frying the minced garlic in it for a few minutes.
  6. Add the chicken to it and fry until brown. Once done, remove the pieces.
  7. Now cook the chopped peppers, onion and tomato pieces over moderate flame for 10 minutes.
  8. Add chilly powder to the mixture and blend the whole content well.
  9. Adding the seasonings, rind, almond and raisins to it, simmer it for 30 minutes. Keep the pot covered while the mixture is cooking.
  10. Add the chopped chocolate to it and stir, until melted mixed.
  11. Place the chicken pieces onto a baking tray and ladle over the sauce nicely.
  12. Bake it at a temp. of 350 degrees F for an hour, or until the chicken is cooked and tender.
  13. Warm the light rum igniting it on the pan itself and pour over the cooked chicken. Allow the combination to rest for sometime.

Tips:

  • Chilly-sauce, tortillas and fried beans are good accompaniments for this recipe.
  • Butter can also be used instead of olive oil.
  • If you don’t want that sweet bits of raisins, avoid it.

For chilly-sauce the ingredients and method are as follows:

  • Tomato: 1
  • Salt: 1/2 tsp.
  • Jalapeno pepper: 1

Method:

Blend the three ingredients until they become a smooth pasty mix.

*You can interchange the quantity of pepper and tomato as per taste. More of tomato is for a milder taste whereas more pepper adds more heat to the taste.
