This chicken mushroom soup is easy to prepare and fast at the same time. It also boasts of its high nutritional content because of the mixture of mushrooms and chicken which are both very nutritious and delicious too. Preparation and cooking time for this recipe will only take less than an hour so it is very convenient indeed.
Ingredients:
- 4 cups chicken stock
- 1 can fresh crimini mushrooms (approximately 16 ounce)
- 1 pound chicken meat (bones and skin removed)
- 1 yellow onion (chopped)
- 4 tablespoons butter (unsalted)
- 2 cloves garlic (chopped)
- 3 tablespoons sherry (dry)
- Fresh parsley
Directions:
- Melt the butter in a pot over medium heat. Add in chopped onions and sauté until it becomes translucent. Add in garlic and stir constantly.
- Add in mushrooms and add salt and pepper to taste. Cook the mushrooms until the water they produced starts to evaporate. Pour in the chicken stock and cover the pot. Let it simmer for about ten minutes then remove pot from heat.
- Using a blender or a food processor, puree the soup until you achieve the consistency you want. You can also use a hand blender and directly puree your soup on the pot as it simmers.
- Add in the chicken meat and let it simmer for about five minutes. Constantly stir the soup to avoid it from boiling. Add in the dry sherry and salt and pepper to taste. Serve heated with a fresh sprig of parsley and pepper flakes.
