How to Make Chili Con Queso

Having an unplanned party and looking for a perfect dip? Well, this is the perfect recipe to partner for your nachos.

Ingredients:

  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 2 tablespoons butter or margarine
  • 1 can (4 ounces) chopped green chilies
  • 2 ½ cups shredded Cheddar Cheese
  • 2 cups shredded Monterey Jack Cheese
  • 1 cup milk
  • salt and pepper to taste
  • Tortilla chips or Nachos

Instructions:

  1. Melt butter in a heated saucepan over medium heat. When butter is hot, sauté onion and garlic. Add the chilies and cook for about 5 minutes. Add salt and pepper to taste. Switch heat to low and slowly add the cheeses and milk while stirring slowly. Make sure that the cheeses are melted before adding a few more of it. Serve warm with the nachos or tortilla chips.

Variations:

  1. You can use 6-¾ packages (8 ounces) cream cheese instead of the Cheddar cheese and Monterey Jack Cheese.
  2. Instead of using green chilies, you can substitute chopped 3 ½ red bell pepper and 6 ¾ green bell peppers. In cooking, sauté the red and green bell peppers along with onion and garlic. Then add 1 ¾ chili sauce.

This recipes makes 24 servings.
