Ingredients:
- 1/2 cup shortening
- 1/2 cup sugar
- 1 egg
- 1 cup molasses
- 3 cups flour, sift before measuring
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 1/2 teaspoon ground cinnamon
- Dash teaspoon ground ginger
- Dash ground cloves
- 1 cup hot water
- 3/4 cup raisins, optional
- 3/4 cup chopped pecans, optional
Instructions:
- In a large bowl, blend together sugar and shortening using a hand held mixer.
- Then gradually beat in an egg and molasses into the mixture, set aside
- In another bowl, sift together the flour, baking soda, salt, cinnamon, ground ginger and ground cloves
- Gradually stir the dry ingredients into the molasses mixture, and then slowly add hot water
- Make sure that the whole mixture becomes a smooth batter before you mix in the raisins and pecans
- Grease your muffin pans or line with muffin cup liners
- Fill the cups up to about 2/3 of the cup with batter
- Bake at a temperature of 375°F for about 25 minutes
- Cool for about 10 minutes before serving
Makes 12 muffins
