How to Make Cinnamon Muffins

Ingredients:

  • 1/2 cup shortening
  • 1/2 cup sugar
  • 1 egg
  • 1 cup molasses
  • 3 cups flour, sift before measuring
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon ground cinnamon
  • Dash teaspoon ground ginger
  • Dash ground cloves
  • 1 cup hot water
  • 3/4 cup raisins, optional
  • 3/4 cup chopped pecans, optional

Instructions:

  1. In a large bowl, blend together sugar and shortening using a hand held mixer.
  2. Then gradually beat in an egg and molasses into the mixture, set aside
  3. In another bowl, sift together the flour, baking soda, salt, cinnamon, ground ginger and ground cloves
  4. Gradually stir the dry ingredients into the molasses mixture, and then slowly add hot water
  5. Make sure that the whole mixture becomes a smooth batter before you mix in the raisins and pecans
  6. Grease your muffin pans or line with muffin cup liners
  7. Fill the cups up to about 2/3 of the cup with batter
  8. Bake at a temperature of 375°F for about 25 minutes
  9. Cool for about 10 minutes before serving

Makes 12 muffins
