This is a wonderful recipe that gives you a delicious cinnamon raisin bread that’s perfect for any occasion. The tasty cinnamon swirls are also a sure treat for the kids
Ingredients:
- 1 (.25 ounce) package active dry yeast
- 1/4 cup warm water (105 degrees to 115 degrees)
- 2 cups warm milk (110 to 115 degrees F)
- 1/3 cup sugar
- 1/4 cup vegetable oil
- 2 teaspoons salt
- 5 3/4 cups all-purpose flour
- 2 cups raisins
- 1 tablespoon ground cinnamon
- 1/2 cup sugar
- 1 tablespoon water
For the glaze:
- 1/2 cup confectioners’ sugar
- 1 tablespoon milk
Instructions:
- Using a mixing bowl, dissolve the yeast in warm water.
- Carefully add the milk, sugar, oil, salt, and 2 cups of flour. Beat the mixture until it becomes smooth.
- Add the raisins and the rest of the flour to form a soft dough.
- Turn the dough on to a floured surface. Knead the dough until it becomes smooth and elastic. This will take about 6-8 minutes.
- Place the dough into a greased bowl. Turn it once to grease the top. Cover the dough and allow it to rise in a warm place until doubled. This will take about 1 ¼ hours.
- Punch down the dough.
- On a lightly floured surface, part dough in half. Roll each half into a 15×7 inch rectangle.
- Combine cinnamon and remaining sugar then sprinkle over the dough.
- Splash with a littler water. Starting with the short side, roll up the dough tightly, as in a jelly roll. Pinch the seams and the ends to seal. Place the dough, seam side down, in two greased 9x5x3 inch loaf pans.
- Cover the dough and allow it to rise until doubled. This will take about 1 hour.
- Bake at 350 degrees F for 30-35 minutes or until bread is golden brown.
- Remove from pans and place on a wire rack to cool. Combine the glaze ingredients then drizzle over the cinnamon bread loaves.
