Ingredients:
- 2 cups fresh or frozen cranberries (chopped)
- 1 2/3 cups sugar
- 2/3 cup vegetable oil
- ½ cup milk
- 2 teaspoons lemon zest (grated)
- 2 teaspoons vanilla extract
- 4 eggs
- 3 cups all purpose flour
- ½ cup walnuts (chopped)
- 4 teaspoons baking powder
- 1 teaspoon salt
Instructions:
- Preheat the oven to 350 degrees F.
- In a large bowl, mix together 2 cups of cranberries, 1 2/3 cups sugar, 4 eggs, 2 teaspoons lemon zest, 1/3 cup oil, ½ cup milk, and 2 teaspoons vanilla extract.
- Stir in 3 cups all purpose flour, 4 teaspoons baking powder, and 1 teaspoon salt.
