Here’s a fun breakfast muffin recipe guaranteed to give your little ones a delightful surprise in the morning. You can even serve with hot chocolate or cold milk for a special snack anytime.
Ingredients:
- 1/4 cup butter, softened
- 2/3 cup sugar
- 1 teaspoon finely grated lemon peel
- 1 egg
- 1/2 teaspoon vanilla
- 1-1/4 cups cranberries
- 1 cup plus 2 tbsp cake flour, sifted
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup milk
- 1/4 cup chopped pecans, optional
Topping:
- 1 teaspoon sugar combined with 1/8 teaspoon ground cinnamon
Instructions:
- Make sure you preheat your oven to 375°F before baking
- In a big bowl, beat butter, sugar and lemon until you get a light creamy texture
- To give the muffins a reddish hue, mash some of the cranberries and mix it into the batter
- Combine the flour, salt and baking soda together
- Then, slowly fold the dry ingredients into the batter, while alternating with splashes of milk.
- Mix in the remaining cranberries and pecans if you prefer
- Before spooning the mixture into the muffin cups, check if they have been lined with paper muffin liners or if they have been greased properly
- Before putting the muffins cups into the oven, sprinkle each cup with sugar and a little spice
- Bake for about 25 minutes
