How to Make Cream of Chicken Soup

On a cold morning, if a bowlful of creamy chicken soup is served, no one can resist. And if it is made at home, nothing can beat its aesthetic value. It does not take much time to make and the necessary ingredients are easily available and inexpensive. You can make cream of mushroom, celery, cheese sauce or chicken.

The basic steps involved in making cream or any of the above items are to melt butter and adding the flour. Cook for a while and whisking it gently in the milk. The cream is ready!

If you are making cream of chicken flavored soup or sauce, milk and broth should be used in equal proportion. While adding the flour, formation of lumps must be avoided. It can be done ahead of time before serving. Both milk and broth along with the flour is to be cooked over low flame for a while until thick.

To make a cheese-sauce, just add grated cheese (any variety) to the broth and simmer until dissolved.

To make different creams, take nicely chopped mushrooms, onion (if desired) and celery and sauté them in butter. After a while, add the milk-broth mixture and sprinkle the flour. Mix the entire content to an even consistency. The quantity of the items can vary as you preferred.


  • Butter: 1/4 cup
  • Flour:1/4 cup
  • Milk: 1/2 cup
  • Half-and-half: 1/2 cup
  • Chicken broth: 3 cups
  • Cooked chicken: 1 ½ cups
  • Dash pepper


  1. Dice the cooked chicken.
  2. Melt butter in a saucepan and whisk flour into it.
  3. Cook it until smooth but no change in color.
  4. Add chicken broth, milk and half-and-half to it and blend it thoroughly.
  5. Cook the entire content of the pan until little thick.
  6. Reduce the flame and add the cooked chicken.
  7. Sprinkle dash pepper.
  8. Simmer the soup until nearly steaming.
  9. Serve the soup in soup-bowls garnishing with springs of herbs, if required.


  • Instead of milk, you can use instant non fat dry milk also.
  • Basil and thyme add extra aroma and healthy quotient to the dish.
  • Flour can be replaced with cornstarch.
  • You can prepare the chicken broth at home or get it at the market.
  • White pepper instead of black pepper is a good option.
  • Onion powder, nutmeg powder etc add a unique flavor and aroma to the soup.
