How to Make Creamy Pasta

A selective taste bud will surely take pleasure on creamy pasta recipe especially when cooked the primavera way. Primavera in Italian means ‘spring’. Culinary traditions suggest that primavera means to throw whatever is fresh from the garden into the pasta. However, in the recent years, the use of butter and cream to somehow make the pasta creamier made its way into the dish. The inclusion of these two significant ingredients overpowers tender vegetable flavors turning it into something rich and buttery.

Ingredients:

  • 8 ounces spaghetti
  • 1 cup julienned carrots, florets, and scallions
  • 1 cup zucchini, cut into finely matchstick strips
  • 3 tablespoons olive oil
  • 3 tablespoons all-purpose flour
  • 1 ½ cups of milk
  • 3 tablespoons grated parmesan and/or Romano cheese

Instructions:

  1. Boil water and cook the pasta. Drain and transfer it to a large bowl.
  2. Steam the cup of julienned carrots, broccoli florets, scallions, and zucchini for about 5-6 minutes or until tender.
  3. In a saucepan, heat the olive oil and add 3 tablespoons of all-purpose flour and pour in 1 ½ cups of milk. Continue whisking the flour and the milk until it thickens and comes to a boil. Remember to keep your saucepan in a low heat.
  4. Remove from heat and add the steamed vegetable mixture. Sprinkle grated parmesan or Romano cheese for a creamier taste over the pasta before serving.
