This flavorful and creamy Zucchini soup recipe can come with apples and curry powder as ingredients. Serves four to six persons and you can put in your personal choice of garnish and toppings like celery or chopped peanuts or almonds.
Ingredients:
- 1 medium sized onion, chopped at about 1/2 cup
- 1 small clove of minced garlic
- 1 small carrot, peeled and shredded
- 1 tablespoon of butter
- 2 medium sized zucchini, sliced or chopped
- 2 pieces of apples, pared and sliced
4 cups of chicken stock
2 1/2 teaspoons curry powder

Instructions:
- Melt one tablespoon of butter over a large stockpot or sauce pan with medium heat.
- Add in and sauté the minced garlic, shredded carrots, and chopped onions until the onion turns to yellow.
- Add the sliced zucchini, sliced apples, and chicken broth to the mixture. Add the curry powder and allow it to come to a boil for two minutes.
- Cover and simmer for about 20 minutes reducing the heat to low.
- Gently blend the hot soup in small portions using a food processor or blender.
- Add salt, pepper and serve the soup garnished with parley leaves or cilantro.
