The tastiness in this makeover of traditional ham and bean soup recipe comes from mixed vegetables, beans, and ham bones. This delicious American appetizer is also perfect as a light dinner when served with a cracker or a green salad.
Ingredients:
- 1 ham bone
- 1 pound beans (Black, Navy, or Great Northern)
- 1/2 cup diced onion
- 8-10 cups water
- 1 carrot, peeled and chopped
- 2 cups ham, cubed or cut into chunks
- 1 bay leaf
- 8 ounces tomato sauce
- ½ teaspoon salt
Directions:
- Firstly, you need to rinse the beans paying particular attention to set aside broken and discolored ones. Using a large soup pot, add 8-10 cups of water and let it simmer for few minutes. Once the water comes to a boil, whisk in some salt and put the pound of beans. Remove the soup pot from the heat and allow the beans to sit in for an hour.
- After cooking the beans for an hour, remove and set aside it to a different bowl. In the same soup pan, place the ham bone, the chopped carrot, minced onion and garlic, and the bay leaf in the soup pot. Consistently stir the mixture, partially cover the pan, and cook over medium to low heat for another hour.
- Thrust aside the ham bone in the soup pot, mix the chunked ham, and let it simmer for another 30 minutes. Season the soup mixture with salt and pepper, and then serve.
