Oatmeal muffins have always been a favorite breakfast choice for many people through the years. Packed with ingredients that can help lower your cholesterol level, these oatmeal muffins should be a regular staple on your breakfast table.
Ingredients:
- 2 3/4 cups flour
- 2 cups oat bran
- 2 1/2 cups quick cooking oats
- 1 cup sugar
- 3 Tbsp. Baking powder
- 2 tsp. Salt
- 3/4 cup milk
- 1/3 cup oil
- 1 egg
- 1/2 cup nuts (optional)
- 1/2 cup raisins or currants
Instructions:
- Preheat your oven to 400°F
- Grease 12 muffin cups with melted butter then set aside
- In a large bowl, mix milk, oil, egg, nuts and raisins and make sure its mixed well
- Combine the flour, oat bran, quick cooking oats, sugar and baking powder until you get a lumpy batter mixture
- Spoon the batter mix into the prepared muffin cups and place in the oven
- Bake the muffins for about 15 minutes or until muffins get a golden brown color. Do not let it stay in the oven for more time than it should because it may lose all its moisture
- Make sure that you cool the muffins for a few minutes before it’s served
