How to Make Peanut Soup

Peanut soup is well loved by many since it is very delicious and it is very creamy. This delicious soup which is rich in sodium tastes great with sour cream and can be used as a dip for crusty bread. The taste of this recipe will mainly depend on the peanut butter used so it is advisable to find the best and natural peanut butter to use when cooking this recipe.

Ingredients:

  • 1/2 cup brown rice (uncooked)
  • 2/3 cup extra crunchy peanut butter
  • 1/4 teaspoon chili powder (optional)
  • 1/4 teaspoon pepper
  • 8 cups vegetable broth or stock
  • 1 can crushed tomatoes (approximately 28 ounce, with liquid)
  • 4 cloves garlic (minced)
  • 2 large red bell peppers (chopped)
  • 2 medium onions (chopped)
  • 2 tablespoons olive oil

Directions:

  1. On a large stock pot, heat oil in medium high heat.
  2. Once oil is heated, add in onions and chopped red bell peppers; sauté well before adding in garlic.
  3. Continue to stir while gradually pouring in tomatoes, vegetable stock, chili powder, and pepper.
  4. Leave the pot uncovered and reduce the heat to low. Allow the soup to simmer for about thirty minutes.
  5. Add in the uncooked rice while continuously stirring.
  6. Cover the pot and let it simmer for another thirty minutes.
  7. Once the rice becomes tender, add in the peanut butter and mix it well until it becomes blended. Serve heated.
