Are you tired of eating traditional “pigs in a blanket” with hot dogs stuffed in a roll of bread? Well here is a must-try recipe for a more creative and healthier version of this dish.
Ingredients:
- 1 large head cabbage
- 3/4 lb. ground pork
- 3/4 lb. ground beef
- 1/2 cup finely chopped or ground onion
- 1 egg
- 2 tablespoons salt
- 1 teaspoon black pepper
- 1 tablespoon paprika
- 1 cup rice, uncooked
- 1 can (2 1/2 cups) sauerkraut
- 1 can (2 1/2 cups) tomato juice
- 3 cups water
- 1 cup sour cream
Instructions:
- Boil water in a large saucepan. Meanwhile, cut the cabbage in half. When the water boils, put the cabbage head-down and cover for a few minutes. Turn off the heat.
- Once softened, remove the cabbage from water and separate the leaves. Trim the middle vein of each leaf to make them flat.
- In a bowl, combine meat, onion, egg, and rice. Season them and mix well.
- At the center of each cabbage leaf, put about 2-3 tablespoons of the mixture. Fold the two sides toward the center and secure them in place with toothpicks.
- Put the rolls in a large pot. Spread sauerkraut over them and add the tomato juice and water. Increase the heat and allow it to boil. Once boiling, reduce the heat and simmer for one and a half hours.
- Place the cabbage rolls on a serving platter. Take some of its liquid and mix with sour cream.
- Pour this sour cream mixture over the cabbage rolls and then serve. This makes 8 servings.
