Dim sum, which means “touch the heart” in Chinese, refers to a wide range of light dishes served with tea. Originally intended as a snack, it has evolved into a favorite appetizer and even eaten as a main meal. This recipe is for a pork dim sum.
Ingredients:
- 14 oz of ground pork.
- 2 scallions, chopped.
- 1 ¾ oz of canned bamboo shoots, chopped.
- 1 tablespoon of light soy sauce.
- 1 tablespoon of dry sherry.
- 2 teaspoons of sesame oil.
- 2 teaspoons of superfine sugar.
- 1 medium egg white, lightly beaten.
- 4 ½ teaspoon of cornstarch.
- 24 wonton wrappers.
Instructions:
- Combine the ground pork, chopped scallions, bamboo shoots, light soy sauce, dry sherry, sesame oil, superfine sugar, and beaten egg in a bowl until well mixed. Stir in the cornstarch in short intervals while mixing thoroughly.
- Lay out the wonton wrappers on a clean, flat surface.
- Put a tablespoonful of mixture in the center of each wrapper.
- Lightly brush the edges of the wrapper with water.
- Bring the sides of the wrappers together into the center, pinching it firmly to wrap the filling completely. Repeat with the other wrappers.
- Line a steamer with a clean dishcloth. Arrange the wontons inside.
- Steam for six minutes or until the dim sum is cooked.
