Salmon Pate is an easy to make appetizer. It is also popular as a snack. While it is readily available in stores, a homemade one can be tastier, allowing for experimentation in the quantity of the ingredients.
Ingredients:
- 1/4 pound unsalted butter, softened
- 1 pound salmon, cooked or smoked
- 3/4 cup sweet onion, minced
- 1 tablespoon lemon juice, fresh squeezed
- salt, to taste
- ground pepper, to taste
- 4 ounces thin crackers
- 25 each green olives, pimento stuffed
Instructions:
- Chop finely the salmon pieces in food processor. Set aside.
- In a mixing bowl, whisk the butter until it has an airy and fluffy texture. It doesn’t matter whether it is achieved by manual whisking or with an electric mixer.
- Add the salmon to the butter and mix well.
- Add the onion and lemon juice.
- Season with salt and pepper.
- Place the mixture in an airtight container. Refrigerate for eight hours. This will provide enough time for the flavors to blend well. The mixture should be used within three days.
- Serve as a spread on top of small crackers or baguette slices.
- Garnish with green olive stuffed with pimiento.
