Place the shrimp pieces on a flat and dry surface, and pat then dry.
Sprinkle salt on the shrimp pieces and set it aside for about 10 minutes.
Meanwhile, melt butter in a skillet over medium heat. When the butter starts to foam, increase the heat to high.
Place the shrimp pieces into the skillet. Make sure they are positioned in a way that all the pieces get cooked evenly. Let the shrimp cook for about a minute.
Add the minced garlic to the skillet and cook the contents for another minute.
Turn the shrimp over to the other side, and this time, cook the shrimp for about two minutes. After two minutes, remove the shrimp from the heat and place them in a bowl.
In the pan, however, add vermouth and lemon juice in order to deglaze. Add lemon zest to the pan along with chopped parsley. Remove them from the heat, and place the contents of the pan on the shrimp in the bowl. You can now serve shrimp scampi.
