How to Make Strawberry Soup

Here is a great strawberry soup dessert recipe that can surely cool down those hot summer days at the beach. If you can’t get hold of fresh strawberries because it may be out of season, frozen strawberries can be used in this recipe as an alternative.

Ingredients:

  • 5 cups sliced fresh strawberries or frozen strawberries
  • 13 Tbsp sugar
  • 3 cups water for fresh strawberries while 1 ½ cup water for frozen
  • strawberries
  • 1 cup strawberry flavoured yogurt
  • 1 cup dry white wine
  • 2 Tbsp lemon juice
  • 2 tsp lemon peel
  • Cognac (optional)

Instructions:

  1. Mash together strawberries, sugar and water until berries are soft and you get a consistent mixture. You may need to thaw out the frozen strawberries first if you are using them
  2. Then put the whole mixture in blender and puree the mixture while slowly adding the strawberry flavoured yogurt until you get your desired thickness
  3. Add wine, lemon juice, and lemon peel. Combine all ingredients using the pulse mode on your blender. Make sure that you don’t thin out the mixture very much
  4. Chill for about 15 minutes before serving. Season to taste with cognac if preferred
  5. Serve in clear bowls and garnish with grated lemon peel

Serves 4 – 6
