When tomato and basil combine, it creates a fresh flavor reminiscent of a sunny afternoon in Italy. This tomato and basil soup recipe can be served as a tasty starter in a dinner and can perfectly be paired with your choice of white wine. It can also make a great afternoon snack served with some crackers on the side.
Ingredients:
- 2 cans Crushed Tomatoes
- 2 cups Chicken broth or vegetable broth for vegetarians
- 1 bunch Fresh basil
- 1 large Shallot
- 1/2 whole Onion diced
- 3 cloves Garlic sliced
- 2 tablespoon Vegetable oil
- 1 cup Cream
- 3 tablespoon Sugar more as desired
- Ground pepper to taste
Instructions:
- Saute finely sliced garlic, finely diced shallots and diced onions in a large stockpot over medium heat. wait until all ingredients give off a fragrant smell and onions have become transparent.
- Add the crushed tomatoes and some sugar to taste. Sugar is used so that it can bring out the fresh flavor of the canned tomatoes. Simmer the mixture for about 7 minutes.
- Add in the chicken broth and stir very well. Turn off the heat and allow the mixture to cool before you start to puree the soup. You can use a blender or a food processor to evenly smoothen out the puree mixture.
- Before serving, make sure that you heat the soup over medium heat.
- Serve in bowls and pour some cream on top. Don’t forget to top each bowl with some fresh basil leaves.
