Ingredients:
- Leftover turkey
- 3 medium onions (chopped)
- 2 large carrots (diced)
- 2 celery ribs (diced)
- 1 cup butter (cubed)
- 1 cup all-purpose flour
- 2 cups half-and-half cream
- 1 cup long grained rice (uncooked)
- 2 teaspoons salt
- 1 teaspoon chicken bouillon
- 3/4 teaspoon pepper
Directions:
- Cover leftover turkey with water and let it boil and simmer for an hour.
- After simmering the leftover turkey, set aside the broth and separate turkey meat from its bones.
- Cut the meat into bite sized pieces and set it aside for later use.
- In a large pot, melt butter over medium heat. Once butter has melted, add in onions, carrots, and celery; Sauté them well until tender.
- Set the heat to low before adding the flour. Make sure you stir flour well into the mixture.
- Add in turkey broth gradually while constantly stirring.
- Let the broth boil and stir it constantly for two minutes, making it simmer and thicken.
- Add in half-and-half cream, salt, uncooked rice, chicken bouillon, and the turkey meat.
- Reduce heat and let it simmer while covered for thirty minutes up to an hour. Make sure that rice is tender before serving.
