How to Make Vegetable Beef Soup

This Vegetable Beef Soup Recipe is cooked in a traditional way making use of beef shanks and vegetables.

Ingredients:

  • 3 to 4 pounds of beef shanks
  • 2 tablespoons of bacon drippings
  • 2 quarts of cold water
  • 1 teaspoon of salt
  • 1 small sized chopped onion
  • 1 can (15 ounce) diced tomatoes
  • 6 sprigs of parsley
  • 5 pieces of carrots, chopped
  • 2 cups of fresh green beans, cut into pieces
  • 1 cup of sliced potatoes
  • 1/2 cup of diced celery
  • 1/4 cup of barley or rice

Instructions:

  1. Cook the beef shanks in the fat or bacon drippings just enough until it turns into golden brown.
  2. Take away the excess fat drippings and pour in two quarts of water; allow it to come to a boil.
  3. Simmer the mixture for two hours and add the chopped onion and salt.
  4. Add in the vegetable ingredients such as the chopped carrots, diced tomatoes, diced celery, green beans, parsley, and sliced potatoes.
  5. Cook the soup mixture for one hour more. Separate the meat from the bone and return the meat to the mixture and cook until the meat and vegetables are tender.
