To truss a turkey means to tie its legs and wings together. This makes the bird look tighter, and presents a better picture overall. The following steps are followed in order to truss a turkey:
1. First, stuff the neck and the body cavity of the bird. Put a piece of bread on the neck and the body cavity to prevent the stuffing from coming out. Attach the skin of its neck to its back with the help of trussing pins.
2. Pressing the turkey legs close to its body, tie its legs together using a piece of kitchen string. The ends of the legs should touch each other.
3. You may tuck the wings tips behind the shoulder of the bird, to prevent them from burning while the meat is roasting.
